These open-faced herring sandwiches with cucumber and lettuce are perfect as starters or for a light dinner.
Melt the butter in a small pot over a low heat. Press the garlic cloves and add them to the hot butter.
Cut the bread slices in half diagonally and pour the butter with garlic on them (1 teaspoon per half). Place on a big plate arranged in a circle. Set aside.
Cut the cucumber into rounds about 2mm thick. Layer all the ingredients over the buttered bread slices in the following order: lettuce leaves, cucumber rounds, herring pieces.
Your herring sandwiches are ready to serve!
