I needed a quick dinner with no fuss and just kinda threw this together. It turned out to be hecka yummy! It’s a quick portion of protein for the single person on the go.
Preheat your oven to 375 F.
I started with a frozen piece of salmon. This was an impromptu meal, so it wasn’t defrosted and I didn’t feel like waiting around for it to defrost.
Tear off a piece of aluminum foil (about 8 x 8). Pour olive oil into it and then throw the salmon in there. Ok, don’t really throw it. I mean you can, but the entire thing might go flying across the room.
Be sure to coat both sides of the salmon with the olive oil. Sprinkle the garlic salt on both sides. Finally, sprinkle the bread crumbs over the top of one side ONLY of the salmon. This gives it that messy, rustic look. It’s not pretty, but you want to tear into it once it’s fully cooked!
Wrap it in the foil and bake in the center rack for about 15 minutes. Then, flip it over and bake until done.
I paired this with my Alfredo Linguine with Vegetables.
