Grown up mac & cheese. A quick all-in-one meal.
Cook pasta.
In a small pan melt butter over medium heat. Add flour and cook until a paste forms (about 1 min), stirring constantly. Slowly add milk, stirring briskly. Bring to a simmer, stirring constantly and cook until sauce thickens.
In a large bowl, combine sauce with cheeses. Add cooked pasta and veggies to cheese sauce. Add chicken, if desired. Pour into casserole dish.
In a small bowl combine Parmesan cheese and wheat germ. Sprinkle over pasta.
Bake for 15 minutes at 350 degrees.

I just made this for dinner and it was very good. I used WW flour and my cheeses were close but not identical. I used what I had. With some ground pepper and a sprinkle of garlic powder, it was complete. My son thought it was a winner. I look for recipes that use WW pasta and additional healthy ingredients while still tasting delicious. This one was a winner.
