One of my absolute favorite recipes of all time is this hashbrown casserole which just so happens to combine several of my favorite things, bacon, cheese, and potatoes. Yes, it’s technically breakfast but we eat it for dinner over here.
Preheat oven to 400F.
In a skilllet cook bacon. Remove bacon from the skillet and set aside. Drain grease from pan and cook hash browns and white onion on medium high heat until heated through.
Meanwhile mix the next 8 ingredients with the crumbled bacon, reserving 1/2 of the cheddar cheese. Mix in the hash browns and onions and spread the mixture into a greased baking dish. Top with remaining cheese and the crushed crackers. Bake until cheese is bubbly, about 15 minutes.
Makes 6 servings at about 300 calories each.
