Rice topped with creamy sauce, lots of veggies and crunchy noodles make this a quick and easy, great anytime meal!
In medium skillet prepare sauce by sauteeing chicken in olive oil until cooked through. Add chicken broth and allow to simmer about 5 minutes. Add mushroom soup, parsley and basil. Transfer to small bowl and set aside.
To serve: Into each of your serving bowls… Begin with rice, then sauce, and top with remaining ingredients to your individual tastes and enjoy!

Oooh! Yes, definitely mandarin oranges would go great on it too! Although, sometimes I like it with just all the salty stuff and omit the coconut and pineapple on my own plate…. That’s what I like about them – they’re so adaptable!
