My husband actually came up with this recipe. I love it when he cooks right beside me in the kitchen!
You’ll love these juicy, tasty little burgers. Topped with a pineapple cilantro salsa and a fresh toasted bun, these are just scrumptious!
Pineapple salsa:
I used fresh pineapple, so I cut and cored a pineappple, then diced up about a cup for the salsa. (Make pineapple upside down cake with the leftovers! Or try my Bacon Pineapple wraps—you’ll thank me afer those!)
Add the cilantro, crushed garlic clove, and some finely chopped onion to taste. Pour in the olive oil and salt and pepper and stir. Cover and refrigerate until you are ready to serve.
Burgers:
Meanwhile, you can get your big, strappin’ husband to mix up the chicken for the burgers. Stir together the ground chicken, onion, chopped garlic, cilantro, salt, pepper and milk. Form into 4 burgers, and pan fry over medium heat for 4 minutes on the first side, and another 3-5 minutes on the second side. Just flip them gently and watch that they don’t get too brown.
Pop the opened kaiser rolls into a 350-degree oven for 4 minutes to toast the buns.
Serve with the pineapple salsa, lettuce and tomato and sweet potato fries on the side.
