I made these slider burger-tortilla hybrids on a whim and the family raved about them and devoured them in record time. These will probably become a family regular on fun days like the Superbowl or the 4th of July, and I am going to experiment with freezing them so they can be eaten as a quick snack.
Brown ground beef and drain.
Steam the tortillas in the microwave in a covered bowl with a damp paper towel. Heat for a few minutes until they are soft and warm, not hot. Remove from the container one at a time and spread a few tablespoons of beef, followed by 1 teaspoon onion and pickle, a squirt of ketchup and mustard, and a large pinch of cheddar cheese.
Fold up burrito-style and place in a single layer in a 9×13 inch pan. Continue until all 20 tortillas are complete and the pan is full.
Bake for 7 minutes in a 350ºF oven. Serve warm.
