Description

My mom used to make this for us when we were little, and it’s still one of my most favorite comfort foods! It’s really simple as well! Best served with picante sauce (or salsa), but personally I like it plain. :)

Ingredients

  • 1 can (about 14 Oz.) Green Peas
  • 2 cups White Rice
  • 2 pounds Hamburger Or Ground Beef

Preparation

In a medium saucepan, bring four cups of water to a boil. Add the rice and stir with a fork to make sure the rice is leveled and completely covered with the water. Cover, reduce the heat to low and simmer for about twenty minutes.

Brown the meat in a frying pan. Make sure all the meat is browned. Drain the oil and put the pan aside.

In a small saucepan, dump the can of peas and bring to a boil. You can use fresh peas or frozen, but in my mind why mess with it when the canned peas are simple and delish?

Once your rice is done, combine all the ingredients in a casserole dish, stirring to make sure it’s mixed properly. Dish it up warm and tuck in!

My Mom also made this with corn or peas and she added onions to the hamburger.

My mom used to make Hamburger, Rice and Corn! I loved it as a child, but haven’t thought of it in years! Thanks for the reminder!
