Comfort food with a bit of a twist.
Prepare rice according to package directions.
In a separate pot, brown ground beef.
Add onion and celery. Cook until onion is transparent, but celery is still a bit crunchy.
Mix in soups and soy sauce. Toss in almonds and 1 cup of chow mein noodles.
Fold in cooked rice.
Turn out into a greased 2-quart casserole dish.
Bake in a 350 degree oven for 30 minutes.
More chow mein noodles may be added at the table.
