Great way to use leftover ham. Warm, comforting, and different. Big favorite at our house.
Melt butter; stir in flour, salt, mustard, and pepper until smooth. Slowly whisk in milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas, and eggs.
Pour into an ungreased 8″ square or 11″x7″ baking dish. Cut pastry to fit and place over everything; trim to fit and cut slits on the crust to vent steam while cooking.
Bake at 425°F for 25 minutes.
