Baked and stuffed potatoes. Great for lunch.
Bake the potatoes at 400 degrees for 1 hour.
When the potatoes are cooled, cut them in half the long way and scoop out the pulp leaving 1/4 inch of potato in the skin.
Mix pulp with the ham, 1/2 cup cheese, 1/2 green onion, sour cream and pepper. Spoon the mixture back into the potato skins.
Top with the remaining cheese and green onion. Place on a baking sheet and broil for 4 minutes or until cheese melts.
Make 8 servings or 4 if you want a whole potato to yourself.
