Description

So delicious! Especially if it is really fresh halibut.

Ingredients

  • 4 pieces Halibut Steaks, Skin Removed
  • 3 Tablespoons Butter, Melted
  • 1 box (8 Oz.) Panko Bread Crumbs
  • 2 Tablespoons Olive Oil
  • _____
  • PESTO BUTTER:
  • 1 cup Fresh Basil
  • 1 stick Butter, Softened
  • ¼ cups Shredded Parmesan Cheese
  • 2 Tablespoons Toasted Pine Nuts
  • 2 cloves Garlic
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Red Pepper Flakes

Preparation

Prepare the pesto butter by putting the basil, stick of softened butter, parmesan cheese, toasted pine nuts, garlic, kosher salt, and red pepper flakes in a food processor. Puree. Place in a pretty serving dish, and let it sit at room temperature until ready to serve.

Brush both sides of the halibut with butter. Press into bread crumbs to totally coat both sides. Place olive oil in a skillet over medium heat. Add the halibut steaks and sauté for 3 minutes on each side. Transfer steaks to a baking dish and bake in the oven for 10 minutes at 425F. Serve the fish immediately with the pesto butter. Delicious!

This recipe is delicious!!! Last night we wanted to make it and I did not have all of the ingredients on hand. I made a couple of changes to the recipe. First, talapia is much cheaper so I made it with frozen Talapia fillets that I had in my freezer. Second, I made my own bread crumbs with 9 grain bread. I dipped the fish directly into the crumbs to cut down on the amount of butter used! Third, I used toasted almonds instead of toasted pine nuts because I had some raw almonds in my pantry. Every time I make this recipe I am amazed at how incredibly delicious it is!! Try it soon:)
