I love Guinness. I had pork chops, apples and potatoes. This is what I did with them.
Mix Guinness, brown sugar, onion and garlic and set aside. Brown pork chops in a skillet for 1 to 2 minutes on each side. Arrange potatoes and apples in the bottom of 9″ square pan. Lay pork chops over the apples and potatoes and pour the Guinness mixture on top. Bake at 375 F for 35 to 45 minutes, until pork chops are cooked through and potatoes soften.
Note: if you want your potatoes very well cooked, parboil them prior to baking them with the pork chops.

Loved it. Sliced the potatoes thinner than 1/4 inch (withe the help of a mandolin), made sure that no potatoes were sticking together and baked everything in a 9 x 13 inch dish. This helped the potatoes get cooked all the way through.

I made this tonight & it turned out really good. I added one chopped yam & would definitely suggest parboiling the potatoes before putting this in the oven.
