Description

This is an oldie but goodie.

Ingredients

  • 1 package (around 3 Pounds) Corned Beef Brisket
  • 2 bottles (12 Oz. Bottle) Guinness
  • 1 cup Brown Sugar

Preparation

Remove the corned beef from the package. Rinse and pat dry. Trim some of the fat off.

Rub brown sugar onto the meat. Place in a slow cooker or crockpot and pour enough Guinness to adequately cover the entire brisket. Cook for 6 to 8 hours.

I serve this with roasted potatoes and carrots and of course, cabbage. Happy St. Patty’s!

My husband absolutely loved this. I would recommend to follow the instruction to remove the extra fat from the cut of meat, although it is quite easy to remove once cooked.

I made this on St. Paddy’s Day. I followed the instructions (had to guess at the heat setting) and put it into the slow cooker at noon (to eat at 6) for 3.5 hours on high. I then switched it to low. At 5pm it felt VERY tough so I removed it and boiled it for an hour (with all the liquid from the slow cooker). It was done perfectly at that point. I would make it again, yet put it in EARLY with the slow cooker on low and let it go the entire day. The flavor was great!

Just finished dinner – this was wonderful…!!! I slathered some sweet n’ hot stone ground mustard on the corned beef before adding the brown sugar and Guinness…

My husband just came into my office to tell me again how great dinner tasted.
