Like a grilled cheese but much better. I hated pimento cheese until someone “homemade” it at a family vacation. I added the cream cheese and grilled it on sourdough. The hubs said to add it to the menu list, it’s that good, and he rarely says that.
Soften the cream cheese to room temperature. Shred the American cheese. Drain pimentos. Mix together softened cream cheese, mayo, onion powder, cayenne pepper and dash of garlic powder. Add shredded cheese and pimentos, mix well.
Butter one side of each slice of sourdough. Assemble sandwich, cook on a non-stick pan or griddle. Enjoy it and make yourself another.
