This quinoa bowl is packed with color and proteins to keep you full and satisfied!
Combined quinoa and water in a rice cooker and set to cook (or cook your quinoa how you regularly do). When quinoa is done, fluff with a fork and set aside.
Heat sesame oil up in a skillet set to medium-high heat. When it starts to pop, add sliced bell pepper and allow to cook until tender, about 5 minutes. Add the rest of your stir-fry veggies, as well as grilled chicken, and allow them to heat through. If you opted to use fresh vegetables, adjust your timing so they cook to completion. I like to use the frozen stuff since you’re essentially just heating them through, and they are just as good. Toss everything together to coat in the sesame oil, then sprinkle on sesame seeds.
Transfer quinoa, veggies, and chicken to a serving bowl and garnish with additional seeds if you’d like.
