The adult version of our kids’ all-time favorite grilled cheese sandwich, make this for lunch or as an appetizer served with a glass of red wine. Use all fresh ingredients and it’s a sure winner!
Slice tomatoes and cheese each about 1/4 inch thick. Set aside.
Rinse basil and pat dry. Set aside 4-6 medium/large leaves.
Place olive oil in pan and turn on to medium heat.
Place half of the slices of bread into the heated pan, then cheese, basil, and tomato, in that order. Top with bread. Cook until bread is lightly browned and cheese is just beginning to melt. Turn over and cook the other side, about 2 minutes per side.
Total cooking time should be about 4-6 minutes depending on how toasted you like your bread.
