Grilled Basil & Lemon Salmon with Tomatoes & Asparagus

Description

A fast and easy way to cook salmon. Cook this in the oven or on the grill.

Ingredients

  • 1 bunch Fresh Basil, Finely Chopped
  • ½ sticks Butter, Or Butter Substitute
  • 4 pieces Salmon
  • ⅓ Tablespoons Salt, Or To Taste
  • ⅓ Tablespoons Freshly Ground Black Pepper, Or To Taste
  • 1 whole Lemon, Sliced
  • 1 bunch Fresh Asparagus
  • 4 whole Roma Tomatoes, Diced
  • 2 strips Large Pieces Of Foil

Preparation

1. Mix the chopped basil into the softened butter and set aside

2. Lay out foil for each serving of Salmon you plan to make – foil should be about 12-15 inches in length. You can make them individually or put them all together in one large piece of foil.

3. Place salmon in the center of the foil

4. Put about a tablespoon of the basil butter mixture on top of salmon and press down slightly with a spoon along the top of the salmon sprinkle with pepper

5. Place 1-2 lemon slices on top of butter mixture

6. Add asparagus stems to the packet (rub butter mixture on top of asparagus for extra taste)

7. Sprinkle with diced Roma Tomatoes on top of lemon layer

8. Salt to taste and grind fresh pepper on top

9. Pull top and bottom of foil up and roll down until it seals in the center. Fold over the sides several time toward the center to seal and form the foil packet.

10. Place on medium heat grill for 10-15 minutes (in oven cook 10-15 minutes at 375°)

Open steaming packet(s) carefully and enjoy!

I really love this recipe. It couldn’t be easier and I was very surprised by how good it was as leftovers. The lemon had really sunken into the fish at that point. Thanks for submitting this!

I tried this for my very first time cooking salmon. It was good, but we were hoping for a little more flavor throught the salmon.

I made this last night and it was fantasic! I added a little garlic to the butter- because I am addicted to garlic. Other than that it was easy to throw together and it looks great on the plate!

Quick and easy and you can also make this a few hours ahead of time and keep it in the ‘fridge. There’s a Basil and Garlic spice mix that I used to mix with the butter (about 2 tbs.) and then garnished with fresh basil. I put the tomatoes on top of the lemon, and the asparagus on top of the tomatoes. Everything turned out perfect. Even the picky eater kids at the table wanted to try some.

The dish is as colorful as it is tasty.
