Description

Sōmen are thin Japanese wheat noodles that are often served chilled, with a dipping sauce (mentsuyu), as a cooling meal for the hot weather. You’ll see other kinds of Japanese noodles served this way, with buckwheat soba being one of the more common options.

Instead of using plain sōmen for this recipe, I decided to use a brand that had a green tea flavor option because green tea makes me think of spring!

Ingredients

  • FOR THE SAUCE:
  • ½ cups Naturally Brewed Soy Sauce
  • ½ cups Mirin
  • ¼ cups Sake
  • ¼ cups Bonito Flakes
  • FOR THE NOODLES:
  • 8 ounces, weight Green Tea Somen Or Soba Noodles
  • 1 Tablespoon Vegetable Oil
  • ¼ cups Sliced Green Onions
  • 2 Tablespoons Toasted White Sesame Seeds
  • 1 Tablespoon Yuzu Or Satsuma Zest

Preparation

Prepare sauce by coming all of the ingredients and bringing it to boil in a saucepan over medium-high heat. Remove from heat and let it cool to room temperature. Once cooled, strain into a clean container.

Prepare noodles according to package directions. (Note: real noodles do not require the addition of salt). Rinse with cold water; drain. Coat noodles with vegetable or canola oil. Transfer noodles to a zaru (bamboo basket) or individual bowls/plates. Garnish with green onions, sesame seeds, and zest.
