Delicious taquitos made with a yummy crockpot chicken.
I use this chicken for lots of different recipes. It is a great go-to recipe for anything Mexican. Begin by preparing the chicken earlier in the day. Add your frozen chicken breasts and the seasoning packet to a crock pot. Cook this on low about 6-8 hours. Add the green chilis and stir. Once it is cooked, you should be able to shred it with 2 forks. Putting it in the crockpot frozen allows it to make more juice, but you can put the chicken in thawed if you like.
Now to assemble and cook the taquitos. Heat about 1 inch oil in large pan or pot. Warm your tortillas in the microwave and place about 2 tablespoons shredded chicken in each tortilla. Top with a little shredded cheese. Roll them tightly and place them seam side down in the hot oil; this will seal them. Turn once and remove to paper towels when lightly browned. Serve hot and reheat in the oven if eating later. Enjoy!
