I tried a twist on your typical hamburgers—stuffing them with feta cheese and serving with spinach leaves and a tomato-cucumber relish.
Mix 2 tablespoons each of lemon juice, dried oregano and thyme, and the garlic powder, salt and pepper with the hamburger. Form into 9 patties with depressions in the centers.
Fill the depressions with feta cheese and shape the burger around it. Chill for half an hour.
While burgers are chilling, toss together ingredients for relish: tomatoes, cucumbers, garlic, the remaining lemon juice, dried oregano and thyme, the red wine vinegar, olive oil, and salt and pepper to taste. Chill relish.
Grill or broil to burgers to desired doneness. Place relish, spinach leaves and burger on buns of choice and enjoy!
