Description

Fresh citrus skewered with marinated shrimp and thrown on the grill for a perfect bite of summer!

Ingredients

  • ½ pounds Raw Shrimp, Deveined, Shell On
  • 2 whole Grapefruits, Divided
  • 1 whole Lemon, Zest And Juice
  • 1 whole Lime, Zest And Juice
  • 1 teaspoon Cumin
  • ½ teaspoons Cayenne Powder
  • 1 teaspoon Sea Salt
  • 1 dash Black Pepper
  • 1 bunch Cilantro
  • ½ whole Pineapple

Preparation

1. Place the shrimp (with shell on) in a bowl and add juice of one grapefruit, juice and zest of lime, juice and zest of lemon, cumin, cayenne, salt, and black pepper.

2. Cut up the other grapefruit into big chunks and the finely chop up the cilantro and add to the bowl.

3. Stir to distribute and let marinate 30 minutes – 1 hour.

4. While you are waiting, cut up the pineapple into chunks.

5. Heat the grill medium-hot. Skewer the pineapple, shrimp, and grapefruit and place onto the grill. Cook about 10 minutes on each side. The shrimp shells should get a little black on the edges and the fruit will get nice and brown on the edges.

6. Remove from skewers and serve. Leave the shrimp peeling to your guests if you are a lazy host like me!
