Description

I think pasta is the ultimate comfort food and spaghetti is a classic. This is best served over homemade pasta!

Ingredients

  • 1 Tablespoon Olive Oil
  • ½ whole Onion, Chopped
  • 2 cloves Garlic, Minced
  • ½ cups Carrots, Finely Diced
  • ½ cups Celery, Finely Diced
  • 2 cans (6 Oz. Size) Tomato Paste, Plus The Same Amount Of Water (Use The Cans To Measure)
  • 1 Tablespoon Sugar
  • ½ Tablespoons Parmesan Cheese, Grated
  • 1 teaspoon Basil
  • 1 teaspoon Oregeno
  • 1 teaspoon Marjoram
  • ¼ teaspoons Ground Pepper
  • ¼ teaspoons Salt
  • 1 whole Bay Leaf

Preparation

Heat olive oil in a large sauce pan over medium heat. Add onion and garlic and cook for around 5-7 minutes. Add carrots and celery and cook for 8-10 minutes. Stir in all the remaining ingredients. (Use the cans from the tomato paste and add the same amount of water to the sauce.) Bring to an almost-boil, then lower heat to a simmer. Cook for around 1 hour.

Remove bay leaf. Serve over noodles and top with more Parmesean cheese if desired. Enjoy!

I had decided on spaghetti tonight got to my pantry at the last minute only to discover I had no sauce. I quickly ran to the computer and found Angela’s recipe. Since it only required an hour (and not all day) I figured I’d give it a shot. I left out the extra veggies, the sugar, and the Parmesan cheese and wound up with a sauce that tasted BETTER than what I can get in a jar. (And please note that I do not buy cheap spaghetti sauce!) The Preacher loved it and the kiddos never noticed the difference. I am big fan of this sauce and will continue to use it when making spaghetti. Angela, be sure to tell Grandma that I said, “THANKS!”
