This isn’t the usual pimiento cheese sandwich. It is melty and gooey and super easy to make.
Combine cubed Velveeta, evaportaed milk, and drained diced pimientos in a large microwave-safe bowl. Microwave 90 seconds. Stir. Microwave for an additional minute. Stir. Repeat process until cheese mixture is at your preferred consistency. (Add more evaporated milk, if needed.) Spread warm cheese mixture onto slices of your favorite bread or split mini sandwich rolls. Scoop up cheese that oozes out of your sandwich with potato chips. Make a mess and enjoy!
