One of my best friends shared this recipe with me. You can’t believe how good this turns out every time! Serve it hot out of the oven or as a cold entree. It will become one of your favorites.
1. Line a large, oblong casserole dish with foil and spray with cooking spray. Make sure the fillet fits into the dish; you may have to cut it and bake it in two pieces.
2. Wash the salmon fillet in cold water, pat dry with paper towels, and place in the lined casserole dish. (My favorite place to buy fresh salmon is Costco.)
3. Combine the remaining ingredients and mix well.
4. Pour the marinade over the salmon and let it stand for 1 hour. Make sure the marinade gets under the salmon by lifting the edges all around and spoon the marinade over the top several times as it marinates.
5. Bake with the marinade at 400 degrees F for 20-25 minutes. About halfway through the baking, spoon some of the marinade over the top of the salmon. When done, let the salmon stand for a few minutes before you serve.
6. This is just as good cold as it is hot. I like to serve it cold on top of a mixed bed of greens for lunch. Enjoy!
