Description

Boneless Pork Roast, “studded” with garlic cloves- simply divine!

Ingredients

  • 1 teaspoon Ground Cumin
  • 2 teaspoons Steak Dust
  • 2 teaspoons Old Bay Seasoning
  • 2 teaspoons Steak Seasoning
  • 1 teaspoon Garlic Salt
  • 2 teaspoons Taco Seasoning
  • 1 teaspoon Paprika
  • 15 cloves Garlic
  • 1 Tablespoon Olive Oil
  • 5 pounds Boneless Pork Roast

Preparation

Pre-heat oven to 350 degrees.

Prepare pan by spraying with cooking spray or covering in aluminum foil.

In a small bowl, mix all of the spices well with a fork and set aside.

Slice Garlic gloves into 1/2 or 1/4ths depending on size and place in a small bowl.

Making sure the slices garlic cloves are close, place pork roast into prepared pan. Using a sharp paring knife, start at one end of the pork roast and make slits, one at a time.

As you make a slit, slide a piece of garlic into the pork. (You can make the slits all at once and then go through and put garlic in the pork that way, however it is much harder to find your cuts that way!). Continue until all of the garlic is used, making sure to space the garlic out (about 1/2 an inch from each other) and turn the pork over and do the other side as well.

Spread the olive oil on all sides of the pork, then spread the mixed spices and rub well into the pork.

Roast in the oven for 20-30 minutes per pound, or until pork comes to an internal temperature of at least 160 degrees.

Slice to desired thickness using an electric knife.

Enjoy! The garlic cloves will be soft and edible, so there is no need to remove them when serving. Makes a great table-side presentation to cut the pork just before serving at the table!
