Description

This recipe is quick, easy, and extremely tasty. It is an excellent choice for guests, as you’re not spending much time in the kitchen. You will receive raves all around.

Ingredients

  • 10 ounces, weight Angel Hair Pasta, Cooked And Buttered
  • 2 cups Broccoli Florets
  • ½ cups Extra Virgin Olive Oil, Divided
  • 2 cups Sliced Fresh Mushrooms
  • 1 whole Small To Medium Red Bell Pepper, Chopped Into 1/2-inch Pieces
  • 1 pound Medium Shrimp, Cooked & Peeled
  • 4 cloves Garlic, Minced
  • ½ cups Chopped Sweet Onion
  • 1 teaspoon Lemon Zest
  • Salt And Pepper, To Taste
  • ½ cups Freshly Grated Parmesan Cheese
  • 6 ounces, weight Package Of Baby Spinach

Preparation

Put the pasta on to cook. Meanwhile, stir-fry the broccoli in 1/4 cup of the olive oil for 5 minutes. Add the remaining oil, mushrooms, and red pepper. Stir-fry for 5 minutes more. Add the shrimp, garlic, onion, lemon zest, salt, and pepper. Stir-fry for 5 minutes. Add the buttered pasta. Toss well. Arrange some baby spinach on each plate and top with a portion of shrimp and pasta. Sprinkle with the Parmesan cheese, if desired.

Cook’s note: contrary to common belief, yes, you CAN serve seafood topped with cheese. This adds another flavor layer and adds to the presentation.

This received a “Yum” rating from my kitchen (which means it will be made again (and probably again). I used regular spaghetti (but the Angel Hair would have been nice if I’d had it), regular spinach was also fine, and baby bella mushrooms. The lemon zest really added a nice favor something I haven’t noted in similar recipes.
