Chicken + Butter + Garlic = TASTY!
Clean, peal and slice the carrots and potatoes.
In an oven proof pan place the chicken pieces (you can use the whole chicken, or simply choose the pieces that your family most likes, e.g. breasts and drumsticks). Around the chicken pieces scatter the carrot and the potato slices.
In the blender or food processor place the coriander, the onion, garlic cloves, chicken stock, salt and pepper and chop and blend well. Pour this mixture over the chicken and veggies. Add the jalapeños scattering them around the pan (these are optional if you don’t like the heat). Now take small bits of butter and place one on top of each piece of chicken, then use the rest of the butter scattering bits around on top of the veggies.
Cover with foil and place in the oven at 180 C degrees, for 30 minutes. Afterwards remove the foil and keep in the oven for other 15 minutes lowering the temperature by half.
And that is it! You are done! Enjoy!!!
