This is my mother-in-law’s recipe, and I can’t make enough of it to please my boys. It’s GONE, with them fighting for scraps every time. We usually have meatloaf with it, or chicken. It’s sweet and savory.
Preheat oven to 350F. Spray a 13×9 pan with cooking spray or butter.
Boil noodles until slightly al dente (they’ll cook a little more in the oven). While they’re cooking, melt your butter (I usually just pop it in the microwave). Peel, core, and dice your apples. I like them a little smaller, but it’s a personal preference. Mix your sugar and cinnamon. I usually use an old jar with a lid, so if there’s any extra, I can keep it handy.
Drain the noodles and immediately mix with the melted butter to keep them from sticking together. Stir in your chopped apples and raisins. At this point, I salt and pepper the noodle mixture, adding a little less than 1/2 of the sugar and mixing well. It helps cool the noodle mixture a little, too.
Once the noodles aren’t boiling hot, mix in your beaten eggs, making sure everything is completely incorporated. Once it’s all mixed up, pour it into your prepared baking dish. I try and smooth the top slightly, so the noodles aren’t sticking up too much. Otherwise, they get too crispy.
I sprinkle the rest of the cinnamon sugar mixture on top. It’s going to look like a lot of sugar and it is, but it’s sooo good. Bake for 30-45 minutes, till the top is golden brown. If it starts to get too brown, you can cover it with foil.
Remove from the oven and cool slightly. I “try” to cut it into squares to serve, but the kids usually just grab the serving spoon from me and load their plates up.
