I know, it sounds strange. I love cooking with whatever I already have in my kitchen, and this was born of necessity one night this summer, thankfully, to the pleasant surprise of my guests!
1. Preheat oven to 400 F.
2. Place fillets (if skin on, lay them skin side down) on lightly oiled foil or baking sheet. Sprinkle fillets with 1 tablespoon oil, salt and pepper.
3. In a small pot, heat the remaining 1 tablespoon of oil, and saute garlic until it begins to soften. Add jelly/jam, lemon/orange juice and water. Stir to combine and simmer and reduce for 2 minutes.
4. When jam mixture is cool, brush over salmon fillets and place in the oven. Bake for 4 minutes. Brush more jam on the fillets, turn up oven to broil and bake for another 3 minutes.
Note: salmon is done when you see a white substance secreting fom it.
