Fried potstickers.
Chop onion, celery, and carrots until very fine. Combine all remaining ingredients (except the wrappers and frying oil) in a large bowl, mix thoroughly. If you can handle touching raw meat, the best way to combine this is with your hands.
Place two teaspoons (or just eyeball it) of filling in center of each wrapper. Fold wrapper diagonally to form a triangle, press firmly around edge with fork to seal. You can also use egg whites or water on two sides of your wrapper to form a better seal.
Deep fry in hot vegetable oil until golden brown. Then remove from oil and drain on paper towels before serving. Dip into soy sauce.
