These babies were fit for a fish-loving king! Or even a not-so fish-loving king. Really these are good for anyone who loves a good taco. I used cod which is super light and fluffy and NOT fishy tasting at all. Once the taco seasoning is added to the mix you really don’t know you’re eating a piece of fish. Which is really helpful when trying to get your picky kids/husband to eat a light non-meat dinner.
In a large high-sided skillet add butter, lemon juice and oil and heat over medium-high heat. Swirl the pan to make sure the oil mixture covers the skillet. Add fish fillets. Allow them to cook about a minute. Add the first tablespoon of taco seasoning to the top side, covering both fillets.
Flip the fillets and add the second tablespoon of taco seasoning covering the other side of each. Allow the fish to cook for another minute or two until cooked through and flaky, eventually breaking the fish up into small pieces as it cooks.
Once fish is cooked through, add it to the taco shell. Taco it up with all of your favorite taco toppings.
