A light, baked chicken dish, perfect any time of the year!
* use a fork to pierce chicken all over, then sprinkle liberally with salt and pepper.
* place chicken in a baking dish, or gallon sized zip lock bag.
*add juice from the lemons, olive oil, and chopped basil. let marinate in the refrigerator for about an hour.
* Pour chicken and marinade into an oven-proof baking dish and bake at 400 for 45 min or until meat thermometer reads 160 when inserted into chicken.
* spoon juices over meat and serve.
-goes great with herb roasted potatoes and fresh veggies!

This is delicious! I made it tonight. Not only were the flavors good but the chicken was very juicy and moist. I will definitely be making this often. It may also be a good marinade for salmon!
