I am always in search of a fabulous chicken salad croissant recipe. Most recipes are too bland, or too mayonnaise-y. This one has great flavor and I love the pop of the grapes and the crunch of the romaine.
Mix it all together, spread on croissants, and enjoy!

Looks so yummy! Chicken salad is my favorite sandwich meal! I made my version today a very-very basic recipe – dieting after the holiday’s. Once sugar is back in my life I’ll be trying this one out.

The Tyson chicken is just my favorite. The chunks are bigger and for some reason it tastes better. Our grocery store carries smaller cans of it or Costco has the bigger ones. Swanson is also great or I do love to use the rotisserie like MrsC said. It’s so much more flavorful. Hope you all enjoy it!

I am sure you could use a different brand of canned chicken, such as swanson etc.; whatever brand your store may carry. Or you could always boil chicken breast or a whole chicken and shred.

Mmmm, this looks delicious! However, I don’t recall seeing Tyson canned chicken in my local grocery. They do have Tyson cooked chicken in a bag–plain grillrd, or roasted, or fajita seasoned. Do you think one of those would work in this recipe? I think the packages are 8 ounces, so I’d have to adjust a little bit.
