Family friendly, easy to make and surprisingly delicious.
Brown ground beef and onion in oil, and when browned, add the enchilada sauce, mushroom soup, corn, green chiles, and simmer together for a few minutes.
Line a 9×13 pan with corn tortillas. Add half the meat mixture, sprinkle with grated cheese, and then place about 4 corn tortillas, torn up over mixture and add the other half of the beef mixture and top with cheddar cheese. Place in a 350ºF oven and bake for about 20 minutes or so. Sprinkle the top with some black olives and cut up green onions for garnish.
Cut into squares to serve.

I make similar recipe. Layers of meat, beans, chilies, cheese, sour cream with the tortillas. If you soak the tortillas in chicken stock for a few minutes only they tend to stay moist in the casserole.
