A quick, easy, and tasty snack introduced to me by my fiance. I use sour cream instead of mayo, but you can use whichever best suits your palate.
Turn oven on to broiler setting.
Toast 4 slices of white bread in a toaster on the medium setting.
In a bowl, combine 2 cans (drained) tuna and 1/2 cup sour cream (or mayo). Mix ingredients. Add more sour cream (or mayo) if the mixture appears too dry.
Place the 4 slices of toasted bread on a cookie sheet.
Spread the tuna/sour cream (or mayo) mixture onto each slice of toast.
On top of each slice of toast/tuna spread, add 1 slice pepper jack cheese.
Place cookie sheet in oven/broiler for about 10 or 15 minutes until cheese is melted. Keep an eye on it to ensure the tuna melt does not get burned.
Note:
I have found traditional sandwich white bread and pepper jack cheese to work best with this recipe, but feel free to experiment.
There may be left over tuna spread depending on how much is spread on the toast, so this recipe can possibly make more than just 4 melts.
I’m not sure why toasting the bread before you put it under the broiler works so well, but I’ve done it before without toasting with less than ideal results.
