Description

No water needed – fish fillets poach in juices from the veggies & some lemon juice. I have used red snapper, cod & salmon and it is always good. Quick & easy to put together!

Ingredients

  • 4 pieces Fish Fillets, (salmon, Snapper, Tilapia, Cod) Fresh Or Frozen, About 1" Thick
  • 1 whole Red Pepper, Cut Into Strips
  • 1 whole Green Pepper, Cut Into Strips
  • ½ whole Onion, Sliced Into Strips
  • 10 whole Mushrooms, Cut Into Pieces
  • 1 whole Lemon, Juiced
  • Freshly Ground Pepper
  • 4 Tablespoons Butter, Cut Into Pieces (for Flavor)
  • Fresh Parsley Or Herb Of Your Choice

Preparation

Spray covered casserole dish with vegetable spray. Lay pieces of fish in single layer in bottom of the dish. Cover with sliced peppers, onions, mushrooms and add the juice from the squeezed lemon. Grind fresh pepper over the top, dot with pieces of butter & any herbs you are using. Cover and bake at 375F for 20 – 30 minutes, until vegetables are cooked and juices are bubbly. Remove from oven and serve over rice or noodles – there will be lots of juice to serve it with – and top with a sprinkle of chopped parsley.

The veggies listed are just what I had on hand and used. If you have leftover peas, corn, zucchini, etc. it would be great as well.
