A delicious blend of penne, extra virgin olive oil, lemon juice, parmigiano reggiano, and a sprinkle of thyme. Especially great when cooking for one!
This is an excellent quick and (relatively) healthy lunch or dinner, and it’s especially handy when you’re cooking for one! Quantities can easily be doubled, quadrupled, etc., if you want to make it for a crowd.
1) Prepare penne according to package directions.
2) While penne is cooking, grate a generous tablespoon of parmigiano reggiano. I use the side of the box grater with the big holes because I like it that way, but you can grate it however you want!
3) When the pasta is done cooking, drain and put into an individual serving bowl. Squeeze a wedge of lemon over the pasta. Drizzle pasta with olive oil, then add a sprinkle of thyme and kosher salt and pepper to taste (I suggest generous amounts of both!). Mix to combine.
4) Top with more grated parmigiano and, if you prefer, mix that in as well.
