Description

This healthy bowl meal is fresh, easy and delicious, and as a bonus, it takes only 30 minutes to make!

Ingredients

  • FOR THE DRESSING:
  • 2 Tablespoons Lemon Juice
  • 1 Tablespoon Red Wine Vinegar
  • 2 Tablespoons Dried Dill
  • 1 teaspoon Dried Basil
  • 1 teaspoon Red Pepper Flakes
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • FOR THE SHRIMP BOWLS:
  • 2 cups Brown Rice, Cooked
  • 2 Tablespoons Olive Oil, Divided
  • 2 cups Broccoli Florets, Roughly Chopped
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 20 whole Shrimp, Deveined And Shelled
  • 3 cloves Garlic, Minced

Preparation

Make lemon-dill dressing by combining lemon juice, red wine vinegar, dill, basil, red pepper flakes, salt and pepper. Set aside.

Begin making the rice according to package directions. While waiting for water to come to a boil, cook the shrimp and broccoli.

Add 1 tablespoon of olive oil to a medium skillet and heat over medium-high heat until oil is hot and shimmering. Add broccoli, salt and pepper. Saute for 10 minutes or until broccoli is tender-crisp.

While broccoli is cooking, add remaining 1 tablespoon olive oil to a large skillet and heat until oil is hot and shimmering. Add shrimp and garlic, and cook for 3–5 minutes on each side, until shrimp is heated and cooked through.

When shrimp is done cooking, stir broccoli and brown rice into the skillet, mixing together. Add lemon-dill sauce and toss to cover.

Scoop mixture into bowls and enjoy!
