Little prep, big flavor, and enough for lunches the following day!
Preheat oven to 375 degrees.
Open the jar of marinara. Add the red pepper flakes right into the jar, put the lid back on, and give it a good shake. Set aside.
Coat a 9×13 inch baking dish with cooking spray. Layer all the chicken tenderloins evenly in the baking dish. Sprinkle the chicken with the garlic salt, pepper, oregano and basil, and sprinkle on the mushrooms.
Pour the marinara evenly over all the chicken. Use a spoon to spread and smooth it out. Liberally sprinkle the Parmesan on top.
Cover with foil and bake for 45 minutes. Remove foil, and bake an additional 15 minutes, or until cheese is slightly browned and bubbly.
May be served over pasta or rice. It’s also great spooned into a soup bowl and then shredded in its own juices!
