Chicken and dumplings are a classic southern comfort food. Nothing says comfort like a bowl of this on a cold winter night.
Place chicken in a large pot with 2 quarts of water and boil until chicken is falling away from the bone. (About 40 minutes). When chicken is done, remove it from the water and let cool. Once cooled, pick the chicken from the bone and add the meat back to soup pot. Discard the skin and bones.
Add the remaining water to the soup pot, along with the bouillon cubes, 1 teaspoon salt and 1/2 teaspoon pepper. Bring the water and chicken back to a boil, then turn down to medium heat.
Place the flour in a large mixing bowl. Add the pinch of salt and pepper and chicken broth and mix together well. Add a bit more flour if the dough seems too wet. It should be the consistency of a thick cake batter. Drop the dough a teaspoon at a time into the simmering broth and chicken. Once all the dough is added, allow to simmer for one hour. That’s it! Simple and easy and oh so good.
