Description

This is the perfect recipe for a quick weeknight sauce – great to use for pasta, chicken, or fish.

Ingredients

  • 1 package (16 Oz) Gourmet Ravioli Or Other Pasta
  • 2 Tablespoons Olive Oil
  • 6 whole Campari Tomatoes, Diced
  • 1 whole Red Bell Pepper, Seeded And Diced
  • 3 cloves Garlic, Minced
  • ½ teaspoons Crushed Red Pepper Flakes
  • 1 Tablespoon Italian Seasoning
  • ½ cups Pitted Kalamata Olives, Chopped
  • 1 can 14 Oz Quartered Artichoke Hearts, Drained
  • 1 cup Fresh Mozzarella Balls (bocconcini) Halved
  • 1 bag ( 10 Oz Package ) Fresh Baby Spinach

Preparation

Cook pasta according to package directions. While it’s cooking make the following sauce.

Drizzle some olive oil into a skillet and cook diced tomatoes and red peppers on medium heat for 2-3 minutes. Add some minced garlic, crushed red pepper and Italian seasonings. Cook for 5 more minutes until the tomatoes begin breaking down creating a yummy sauce.

Chop the olives and throw those in. Then toss in the artichoke hearts. Simmer for a few more minutes and then add the diced up fresh mozzarella and toss that in and stir. Reduce heat to low and simmer. The cheese will begin to melt into the sauce.

Use the fresh spinach as a bed for the pasta and sauce.

I drained the cooked pasta and placed it directly on the fresh spinach and topped it with the sauce. It was fantastic!!!
