“The” Pimento BLT

Description
A Southern favorite, pimento cheese, is a tasty addition to the traditional BLT ingredients that I think goes really well on a crispy English muffin. Try it and let us know what you think!
Ingredients
- 8 whole Strips Bacon
- 4 slices 1/4" Thick Beefsteak Tomato
- 4 whole English Muffins
- 4 whole Lettuce Leaves
- ½ cups Pimento Cheese
Preparation
1. Cook the bacon until crispy.
2. Slice four 1/4″ thick slices from the tomato.
3. Toast the muffins.
4. On each bottom muffin layer the lettuce, then 1/4 of the pimento cheese.
5. Top with 2 slices of the bacon and a tomato slice before topping with the muffin top.
