A light and refreshing, but still thouroughly satisfying, sandwich. The tartness and creaminess of the gorgonzola compliments the sweetness and crunch of the pear – so well-constituted, it almost seems pro.
Prepare sandwich: cover bottom slice of bread with gorgonzola cheese. Separate leaves from the sweet basil sprig and place the leaves randomly on top of the cheese.
Heat pan: place a small pan over medium high heat; add butter. When butter is sizzling, carefully place bottom slice of bread (with the cheese) on the pan. When cheese is barely beginning to melt, add apple or pear slices and then add the top slice of bread.
Check for doneness: bottom slice should be golden brown when it’s ready to flip. At this point, carefully turn over the sandwich and cook until the other, un-cooked slice has browned as well. Serve.
