i came up with this while cleaning the pantry! Quick, easy, and made with on-hand items make this dish a weeknight favorite. Plus, it’s colored with specks of red and green, hence the name!
Preheat oven to 350F. Cook ground beef until no longer pink. Drain fat. Add seasonings and water. Simmer for 5 minutes. Then add tomatoes and green pepper. Simmer an additional 5 minutes. In a greased 3.5 quart casserole dish, layer 1/2 of the tortilla chips, 1/2 of the meat mixture, 1/2 of the cheese. Repeat layers and dot the top with salsa. Bake for 20 minutes. Enjoy!
It looks like a lot of ingredients, but it is because I chose to make my own taco seasoning. You may use a store-bought package if you choose. I just find this to be much healthier and tastier too!

sounds yummy! Something I will try (I like the idea of making your own taco seasoning, something I do too, the packaged stuff is loaded with salt and MSG!)
