Description

Don’t think you have to be stuck eating hot-dogs on a stick at the campground. Host a Campground Italian Night with this tasty dish.

Ingredients

  • 1 pound Ground Beef, Chicken, Turkey, Sausage, Or Venison (you Choose)
  • 1 whole Large Onion, Chopped
  • 2 jars (14 Oz. Size) Spaghetti Sauce
  • 1 pound Penne Pasta
  • 12 slices Provolone Cheese
  • 1-½ cup Sour Cream
  • 2 cups Shredded Mozzarella
  • ¼ cups Shredded Parmesan Cheese

Preparation

In your campfire, heat 36-40 coals until they are gray.

Spray the inside of the Dutch oven with cooking spray. Over the hot fire, brown the meat and onion together. Once the meat is browned, stir in the spaghetti sauce.

Meanwhile, cook the pasta in boiling water as directed on the package.

Drain the pasta once it is cooked and begin assembling the casserole in the following manner: Begin with 2/3 cup sauce on the bottom of a Dutch oven, then 1/2 of the penne pasta, then 6 slices of provolone, 1/2 of the sour cream, 1/2 of the remaining spaghetti sauce mixture, and 1/2 of the mozzarella cheese. Layer again with the remaining pasta, provolone, sour cream, spaghetti sauce mixture, and mozzarella cheese. Sprinkle with shredded Parmesan cheese.

Put the lid on your Dutch oven and bake it in your hot fire with 20 coals on top and 16 coals on bottom for 40 minutes, periodically rotating the base of the Dutch oven and the lid of the Dutch oven to prevent hot spots. We ended up cracking the lid for the last 10 minutes or so to allow excess moisture/steam to escape.
