Description

Easy-to-throw-together chicken that bakes in the oven so you can do all the other things you need to before dinner.

Ingredients

  • ½ cups Fat-free Evaporated Milk
  • 4 Tablespoons Dijon Mustard (you Can Use More Or Less)
  • ½ cups Plain Dry Bread Crumbs
  • ½ cups Freshly Shredded Parmesan Cheese
  • Salt And Pepper
  • 4 whole Boneless, Skinless Chicken Breast Halves (1 1/4 Pounds Total)
  • 3 Tablespoons Melted Butter

Preparation

Preheat oven to 475ºF. Spray a 13×9 baking dish with nonstick cooking spray or grease it by hand.

Combine evaporated milk and dijon mustard in a shallow bowl. Combine the bread crumbs and parmesan cheese in a separate shallow bowl. Season the bread crumb mixture with salt and pepper to taste. Season chicken with salt and pepper and any other seasoning you may like, then brush the chicken with the melted butter. Dip chicken into the mustard mixture, coating both sides, then into the bread crumb mixture. Place into the prepared dish.

Bake for 20 to 25 minutes or until chicken is golden brown and no longer pink in the center. The last 5 minutes mine were in the oven, I misted the chicken with olive oil to help the bread crumbs brown a little more; this is optional.

This is my favorite baked chicken recipe hands down!! The crust is so amazing I could eat it off every piece of chicken. I will say it has hard to keep the breading on the chicken but even if it peels off when I take it off the pan I’ll just scrape it off and eat it haha! It’s really that good!

I loved the ease of this recipe, and the chicken was very moist, which I was worried about since I had to use tenderloin instead of breasts. Definitely worth making more than once!

I didn’t have evaporated milk so I used regular milk but in a smaller quantity and I used Deli mustard instead as well. The chicken was amazing!!! It’s all gone already.

OH LAAAWS SISTER! This is some good chicken. I’m NOT a cook, but this is one ANYONE could make. I impressed my ZORRO and he wants me to make it again! I made a side of Southern Summer Squash posted here by Twinks and it made a delicious meal.

This chicken was EASY and DELICIOUS!!! I will be adding this to the monthly rotation! Even my 2 year old who doesn’t like meat asked for seconds after eating the 1/2 a breast he NEVER eats! I didn’t use the butter because all I had was whole condensed milk…so I figured it evened itself out lol…the only thing I’ll try next time is upping the mustard by a T or 2. Thanks for the delicious recipe!
