This is a wonderful dinner to serve on special occasions, or just when you feel like adding a bit of extra flair to dinner. Serve with a baked potato or salad.
Butterfly chicken breasts before placing them into a Ziplock bag. Pour 1 cup of golden sherry over the breasts and season lightly with seasoning salt. Marinate for at least 2 hours before cooking.
Cook turkey bacon in a skillet over medium heat until crisp, then remove from pan. Using the same skillet, saute mushrooms and onions in the bacon grease over medium heat until tender (about 3 minutes). Remember, these will get blackened a bit. Move to a plate until you’re ready to assemble the dish.
Pre-heat grill or electric griddle. If using the griddle, I preheat mine to about 300 degrees F. Cook chicken until internal temperature reaches 160 degrees F. Time will vary based on the size of the chicken breast.
Once your chicken is grilled, move chicken to individual plates. Pile onions and mushrooms on top of each chicken breast, then layer on bacon slices, topped with 1 slice of cheddar cheese. Melt cheese in the microwave, and serve.
