There’s a real Czech name for this dish, but unfortunately my dad never taught me how to spell it properly. It’s one of the simplest, healthiest, and tastiest comfort foods to make. It’s more sweet than salty, and so pairs wonderfully with smoked kielbasa or sausages, or just eat it on its own for a tasty, healthy pasta dish.
Prepare pasta shells. While water is coming to a boil and pasta is cooking, continue preparing the rest of the dish.
In a pan, melt the butter. Add sliced onions and sauté until browned and nicely caramelized (about 8 to 10 minutes over medium heat).
Mix sautéed onions with cooked, drained pasta. Mix in between 375 grams to 500 grams cottage cheese, depending on how cheesy you want your pasta (in ounces I believe it’s about 13 to 15 oz, or 3/4 to 1 whole large container of cottage cheese). Thoroughly mix with a spoon. Add salt and pepper to taste.
Note: Resist the urge to be even healthier and use olive oil to cook the onions. In a dish with so few ingredients you really can taste the difference. I once made this dish for my dad (who taught me how to make it) using olive oil instead of butter and two bites in he looked at me and asked me why it tasted different. Trust me. Just make peace with the butter. It’s worth it here.

My husband is Polish. I have been making “Cottage Cheese and noodles” all of my married life. I use skinny egg noodles and when they are cooked, I drain them and add butter and cottage cheese. When I tell him I’m making this dish–he croons! He likes pickled beets on the side!
