A tasty, unusual pork roast we usually shred and use as taco meat.
Mix all together except the pork.
Cut the pork loin into to 1 1/2 to 2 inch slices. Dip the pork into the sauce and make sure every piece is covered.
You may cover well, and refrigerate for 6 to 24 hours.
Put it into the crock pot and cook for 8-10 hours.
Take out of the pot and shred with a fork.

I cooked this for supper tonight using half of a pork tenderloin. Instead of marinating (I had just read the recipe and was in a hurry) I slowly poured the sauce over the top of my loin in the crock pot (I didn’t cut it either). Then I added 1/4c water because I didn’t think there’d be enough liquid.
It came out moist, tender, and flavorful. My only wish was that I had a working stove so I could have made wild rice to go with it.
I’ll be keeping this recipe and will make it again.

By the way, the pork is not in the ingredient list.. what size pork loin?

Doesn’t sound so ‘unusual'; sounds like a MUST try! You are on my menu for next week, yay! Good timing too, as my oven is broken!
